If you are like me, and require music in order to cook, I recommend:

Tomato Soup (Vegan Edition)
Ingredients
- 2 Tbsp Olive Oil
- 2 Cans Diced Tomatoes
- 1 Can Coconut Milk
- 1 Large Onion, medium dice
- 4 Garlic Cloves
- 1 tsp. Salt
- 1/2 tsp. Pepper
- 1 Tbl. Italian Seasoning
- 1 tsp. Red Pepper Flakes
- (Optional)Dash of MSG
Prep
- Dice onions to 1/4 - 1/2 inch size
- Mince garlic
Directions
- Caramelize Onions
- Add olive oil to a large saucepan and set a medium-low heat.
- Once oil is shimmering, add onions
- Add salt and stir
- Allow the onions to slowly build color, stirring occasionally.
- If the onions begin to stick or the pan begins to build a golden crust, add water 1 tablespoon at a time to slowly deglaze the pan.
- Add Garlic and the rest
- Once the onions have caramelized, toss in the garlic.
- Sautee the garlic until fragrant,about 20-30 seconds
- As soon as the garlic becomes fragrant, add tomatoes and coconut milk.
- Add spices
- Simmer
- Turn up the heat and bring to a boil
- Once boiling, turn heat down to a heavy simmer
- Allow to simmer for 20 minutes
- Adjust salt and spices to taste.
- Blend
- Use an immersion blender until smooth.
