Tomato Soup (Vegan Edition)

  1. Caramelize Onions
    • Add olive oil to a large saucepan and set a medium-low heat.
    • Once oil is shimmering, add onions
    • Add salt and stir
    • Allow the onions to slowly build color, stirring occasionally.
    • If the onions begin to stick or the pan begins to build a golden crust, add water 1 tablespoon at a time to slowly deglaze the pan.
  2. Add Garlic and the rest
    • Once the onions have caramelized, toss in the garlic.
    • Sautee the garlic until fragrant,about 20-30 seconds
    • As soon as the garlic becomes fragrant, add tomatoes and coconut milk.
    • Add spices
  3. Simmer
    • Turn up the heat and bring to a boil
    • Once boiling, turn heat down to a heavy simmer
    • Allow to simmer for 20 minutes
    • Adjust salt and spices to taste.
  4. Blend
    • Use an immersion blender until smooth.
